The first part of the lesson will be theoretical, Arturo Dori will talk about this traditional tuscan dish.

The second, practical part covers 3 delicious recipes:
- Steamed Baccalà with potato and lemon grass cream
- Pan-seared Baccalà with Sun-dried Tomatoes, Taggiasca Olives and Oregano
- Whipped Baccalà on White Polenta Crostini
