A journey into the tradition of Italian fresh pasta, rediscovered through authentic ingredients and artisanal techniques. During the course, we will learn how to work the dough as it was done in the past, enhancing craftsmanship and respect for the raw ingredients, to create dishes that tell the story of the land and the seasons. All of this is seasoned with a touch of creativity and originality, because tradition is even better when it knows how to surprise.

This evening, our chef Giuseppe presents:

 

  • Ravioli stuffed with sea bream, roasted cherry tomato sauce and basil
  • Red potato gnocchi with asparagus cream and Parmigiano fondue
  • Orecchiette with turnip tops in two textures
  • Red berry panna cotta

 

What to bring? Lots of curiosity.
