Carpaccios

type: Cooking Class

At the chef’s discretion, these lessons include shopping in neighborhood stores and nearby outdoor markets to learn how to recognize and select quality ingredients.

During the lesson we will learn the following recipes:

Beef carpaccio with mustard sauce and crisp celery

Octopus carpaccio with caper and sun-dried tomatoes

Veal carpaccio with seasonal vegetables and parmesan cheese flakes

Morning courses are divided into the following categories:
Exclusive, Individual or Small Group Lessons (maximum 4 students):
these hands-on lessons allow for direct interaction with the chef – and the stove – throughout the lesson.
Group lessons (from a minimum of 5 to a maximum of 10 students):
these lessons, based on the concept of an "interactive cooking show", offer students an opportunity to see and to get a feel for what goes into the preparation of delicious dishes.

Students are asked to arrive fifteen minutes early so that we can start the lessons on time.
Courses will start at 10.00 am and finish at 2.30pm/3.00pm according to the recepis chosen for the lesson.
